Job Purpose

To assist the Food Hygiene In-Charge in managing the overall hygiene programme as an efficient and productive cost and service centre ensuring a seamless operation and therefore contribute to maximising guest satisfaction.

Key Tasks and Duties

  • Responsible for monitoring and product food safety and quality throughout the food production process.
  • Responsible for performing sanitation verification and allergen testing on equipment and other areas required.
  • Ensures the correct recipe guidelines for products are met during processing.
  • Ensures employees are following all Food Safety and worker safety practices.
  • Ensures and educates employees on food safety and SQF standards.
  • Collect product samples for Product Development, lab retains and the laboratory when directed.
  • Educate staff to use the correct QHSE and HACCP standard in the operation.
  • Advice staff on cleaning procedure.

 

Education and Experience

  • Bachelor’s degree or a Master’s degree in a relevant discipline like B.Sc/ B.Tech in food technology/ biotechnology/ microbiology from a recognized institute.
  • Minimum 5 - 7 Years’ experience in Similar Field.

  • Holds a qualification in Kitchen Production, Butchery and Management.
  • Good computer skills. - Effective trainer, experienced in the delivery of skills training.
  • Familiar with current culinary trends and methods.
  • Comprehensive knowledge of kitchen hygiene practices and occupational health and safety standards Certifications.
  • GMP (Good Manufacturing Practice)
  • HACCP (Hazard Analysis and Critical Control Point) - ISO 22000 (Food Safety Management System)/ Quality Management System ISO 9001
  • OHSAS 18001 (Occupational Health and Safety management System)
